The short answer

A US cup of all-purpose flour weighs 120 grams, a cup of granulated sugar 198 g, packed brown sugar 213 g, and a stick of butter (1/2 cup) 113 g, per King Arthur Baking's weight chart. Flour and sugar differ because grams measure weight while cups measure volume.

How it is calculated

grams = cups × grams per cup for that ingredient

1 US cup = 8 US fl oz = 236.59 mL; 1 cup = 16 tbsp; 1 tbsp = 3 tsp

1 metric cup (Canada) = 250 mL

Worked example

Your chocolate chip cookie recipe calls for 2 1/4 cups flour, 3/4 cup sugar, 3/4 cup packed brown sugar and 1 cup (two sticks) of butter, and you want to weigh everything on a kitchen scale.

  1. Flour: 2.25 × 120 = 270 g
  2. Sugar: 0.75 × 198 = 148.5 g
  3. Brown sugar: 0.75 × 213 = 159.75 g
  4. Butter: 2 sticks = 226 g

270 g flour, 148.5 g sugar, 159.75 g brown sugar, 226 g butter

Special cases and common mistakes

  • Spoon and level, don't scoop. Scooping the cup straight into the flour bag packs it and adds weight. Health Canada's measuring guide says to spoon dry ingredients into the cup and level the top with a knife. Weighing skips the problem entirely.
  • Canadian recipes may use a 250 mL cup. A US cup is 236.59 mL, while Canada's metric cup is 250 mL, so a metric cup of flour is about 126.8 g. Pick "Metric cups" in the converter for Canadian cookbooks.
  • Ounces on a scale are not fluid ounces. A cup is 8 fluid ounces of volume, but a cup of flour weighs only 4.23 oz. Use "Ounces (weight)" when a recipe gives flour in ounces.
  • A note on water and milk. King Arthur's chart lists 227 g (8 oz by weight) for a cup of water or milk, while a US cup holds 236.59 mL. The few grams' difference rarely matters in a recipe.
